ENARTIS ZYM AROM MP
Enzyme for the maceration that can be used in the production of white, red and rosé wines characterized by intense primary aromas. In fact, AROM MP contains a strong proteasic activity that breaks the cell membranes thus increasing the extraction of aromatic substances from the solid parts of grapes. In white and rose wine, it helps to reduce the use of bentonite. In red wine, it improves the quality and stability of colour.

ENARTIS ZYM CARACTÈRE
Powdered enzyme with pectolytic, hemicellulase and ß-glycosidase activities. Its high concentrations of pectolytic and hemicellulase activities cause a rapid cell breakdown that is fundamental for high juice yields and good extraction of aroma precursors. Subsequently, the ß-glycosidase activity releases these aromatic compounds thus allowing the production of more intense and complex wines.

Liquid pectolytic enzyme with cellulase and hemicellulase side activities specific for white grapes maceration. Use during maceration, or in the press, increases the concentration of flavour compounds in juice, enhancing varietal character and generally leads to a 6-8% increase in juice yield.

Liquid enzyme preparation developed for juice clarification by flotation. Because of its balanced PG and PE content, it quickly reduces juice viscosity and causes a partial hydrolysis of pectines. Pectines can thus keep a dimension of flocs that helps their fast lift to the surface.

This new liquid enzyme contains both macerative and pectinolytic activities and was developed for use on white grapes which are difficult to rack or to clarify. It is also very active at low pH and because of this characteristic, it is recommended for the treatment of musts destined to produce sparkling wine bases, or musts which have been obtained from immature grapes.
