La nutrizione del lievito è un fattore essenziale nella gestione della fermentazione alcolica. Il prossimo webinar organizzato da Enartis USA affronterà questo importante argomento e si terrà il 13 giugno, 18:30-19:30 ora italiana. Durante la presentazione di circa 40 minuti verranno illustrate le diverse forme di nutrizione, il relativo assorbimento da parte del lievito e l’impatto sul profilo aromatico del vino. Yeast nutrition is an important and essential factor in managing the overall health and success of primary fermentation. Without proper nutrition introduced at the correct stages, yeast can become stressed, produce off-flavors and fail to finish fermentation. During this 40 minute presentation, we will cover yeast nutrition and strategies for managing primary fermentation including: 

  • Yeast nutrient uptake and metabolism
  • How to enhance wine aromas through yeast nutrition
  • Prevention of reductive sulfur aromas
  • Prevention of stuck or sluggish fermentations 
  • 15 minute Q&A
