CRAFT WINEMAKING SERIES LEVEL 2

After the popularity of our Craft Winemaking Series (CWS) webinars in 2018, we are pleased to announce Craft Winemaking Series Level 2! This continuation of CWS will focus on more advanced topics of winemaking. Over the course of one month, Enartis will present four separate sessions on advanced winemaking techniques and training. Each webinar session can be registered for individually, or as a total CWS 2 package for a discounted price. CWS 2 will focus on the following specifics topics:

April 5
Session 1
PÉT-NAT WINES: ORIGINS AND TECHNIQUES FOR MÉTHODE ANCESTRALE WINEMAKING
Pétillant-Naturel (Pét-Nat) is an ancient method of sparkling winemaking which has become increasingly popular over the past five years. This rustic sparkling wine has varying degrees of cloudiness, color and style. A relatively hands-off method, making Méthode Ancestrale wines seems quite easy, but it can have plenty of pitfalls. In the first segment of CWS 2, we will present the process, practice and tips for making Méthode Ancestrale wines from grapes to bottle.

Session 2
PORT WINE PRODUCTION: PAST, PRESENT AND FUTURE OPPORTUNITIES
This course will review the technical production of classified Port wines, including historical vinification and modern innovations. We will take a deep dive into the physical and biochemical processes that contribute to these distinct wines, and how fortified wines throughout the world compare to this iconic beverage. Included in the lecture series is a special guest lecturer who will be sharing the fascinating history and development of Port wine of Portugal.

Session 3
CLEANING AND SANITATION: ADVANCED TECHNIQUES FOR MAINTAINING AND MONITORING SANITARY CONDITIONS IN THE CELLAR
One of the most important aspects of winemaking is sanitation and cleanliness. The degree to which a winemaker cleans and sanitizes their equipment and winery highly influences the chances of spoilage or sensory changes to a wine. For the third segment of CWS 2, we will delve into the differences between cleaning and sanitation, how to setup a sanitation program, choosing the right sanitizers, bottling line sanitation and harvest preparation.

Session 4
WINE FAULTS: HOW TO DETECT AND PREVENT WINE SPOILAGE
In the winemaking process there are many situations which may lead to loss in quality and spoilage. One of the greatest assets a winemaker has for analyzing and determining these wine faults is his/her nose. Many faults and taints in wine can be detected early and avoided before becoming a spoilage issue. For this portion of the Craft Winemaking Series we will train our attendees how to detect wine faults, where they come from, and if possible, how to remediate them. This is a brand-new, remote, interactive sensory course where we will send each registrant a Wine Faults Kit from Aroma Academy. Attendees will have the opportunity to smell and learn wine faults first-hand with the sensory kit during the presentation. Attendees will also keep their wine faults kit (Value $199) so they can continue practicing each fault, mastering their ability to detect issues in wine.

  • Sessions will include time for questions and answers from the presenters.
  • Registration for the complete CWS 2 or for the Wine Faults Webinar MUST occur before March 15 for ordering and distribution of Faults Kits to attendees in a timely manner.
  • For Sessions 1, 2 & 3, event registration will close the day before the webinar.
  • After registering on Eventbrite, registrants will receive an email the day before each session with information regarding access to the webinar.

  • Sessions will be recorded and available to attendees as a downloadable file after the series is complete.
