ENARTIS NEWS - SHELF LIFE IMPROVEMENT (SLI) - ENARTIS PROGRAM TO SLOW DOWN WINE AGEING

A Winemaker's task is to produce a wine that retains its characteristics until the moment of consumption. Stressful storage conditions, the tendency of wine pH to increase and a prolonged time on supermarket shelves are obstacles that make the mission almost impossible. Enartis has developed a program dedicated to the extension of a wine’s shelf life that helps winemakers preserve freshness when wines are stored for a prolonged period of time.

Enartis SLI Program
Ageing is caused by oxidation. It is through a redox reaction catalysed by metals like Cu+ and Fe2+ that oxygen is converted into highly reactive radicals, capable of oxidising a number of organic compounds.

Enartis SLI program consists of adopting strategies capable of blocking the oxidation mechanisms and prolonging the shelf life of wine. The products developed for the SLI program work in synergy acting on five fronts:

  • Quickly consume dissolved oxygen before it can damage wine
  • Remove metals that can transform oxygen into dangerous free radicals
  • Reduce the content of catechins, the main substrate of oxidation
  • Scavenge free radicals
  • Stabilise the redox potential

Enartis Claril HM, Enartis Stab SLI, Enartis Tan SLI and Citrostab rH are capable of acting simultaneously on several fronts and effectively slowing down the wine ageing process.
