Looking to reducing SO2 additions in wine post-fermentation?

Sulfur dioxide (SO2) is one of the most controversial additives currently used in wine production. Enartis offers allergen-free and vegan-friendly alternatives that simulate the antioxidant, antioxidasic and antimicrobial properties of SO2, regardless of wine pH.

The demand for wines with low or free sulfur dioxide content is constantly growing. Not only as a response to the market demand, but also as a solution to the winemaking challenges caused by climate change. In recent vintages, there has been a trend towards higher pH levels in must and wine. This consistent rise in pH comes with a lower effectiveness of SO2, requiring higher doses of sulfites.

After many years of research and experience, Enartis has observed that quality wine can be obtained even when reducing or removing SO2 additions. Enartis SO2-free wine protocol showed better wine quality results post-fermentation: increased aromatic intensity and complexity, better mouthfeel and structure, and less faults. This was achieved with the use of different allergen-free and vegan-friendly products with the same antioxidant, antioxidasic, and antimicrobial properties as SO2, regardless of wine pH. 

Activated chitosan provides antimicrobial, antioxidant and antioxidasic protection, at all stages of the winemaking process. It controls spoilage microorganisms and limits oxidation reactions. 

Tannins have been specifically developed to provide antioxidant and antioxidasic protection in wine preventing phenolic compounds oxidation and, consequently, browning and loss of flavor and aroma.

    Products for low or zero SO2 wines

    EnartisStab MICRO M 

    EnartisStab MICRO M is an allergen-free and vegan-friendly SO2 alternative that contains activated chitosan and yeast hulls rich in chitin-glucan. 

    Due to its clarifying and antioxidative actions, EnartisStab MICRO M can be used at any stage of the winemaking process for many different applications, such as:
    – reducing or eliminating the use of SO2  
    – delaying or avoiding malolactic fermentation, even in wines with high pH
    – controlling undesirable microorganisms 
    The antimicrobial activity of EnartisStab MICRO M is not influenced by wine pH, unlike sulfur dioxide.

    HIDEKI 

    HIDEKI is a blend of selected and purified tannins that provide a very high antioxidant and bacteriostatic protection to  wine. 

    HIDEKI can be used as a natural and allergen-free SO2 alternative:

    • from the early stages of winemaking, during wine storage and pre-bottling 
    • to protect wine from oxidation 
    • to prevent spoilage caused by undesirable microorganisms

    EnartisTan SLI 

    EnartisTan SLI is a technical tannin extracted from unroasted American oak wood produced specifically to improve the shelf life of wine. 

    This alternative to the use of SO2:

    • protects wine from oxidation and increase its longevity
    • stabilizes the wine redox potential
    • treats or prevents reduction problems
    • helps to preserve aromatic and color freshness

    EnartisTan SLI can be applied at any time during the winemaking process. It is especially recommended during wine storage and winery operations where  wine is exposed to risk of oxidation (racking, filtration, bottling, etc.).
