EnartisStab Micro M

Preparation of pre-activated chitosan from Aspergillus niger and purified yeast hulls, Enartis Stab Micro M is designed for treatment of grapes, juice or must, where the presence of solids limits the microcidal effect of pure chitosan.

EnartisStab Micro M is effective in reducing a large number of spoilage yeast and bacteria that contaminate must and wine. It can also be used as a non-allergenic alternative to lysozyme for the control of malolactic bacteria.

Applications

White, red and rosé must: reduction of spoilage microorganism populations during prefermentative maceration, in alcoholic fermentation.
Reduction of SO2 addition: works in synergy with SO2 as antimicrobial agent during maceration.
MLF control: non-allergenic alternative to lysozyme, it can be used to reduce ML bacteria growth to delay or inhibit MLF.
Helps to control the development of microbial contamination during fining on fine lees.
Helps Saccharomyces cerevisiae dominate over non-Saccharomyces populations.

Pre-activated chitosan: What is it and why choose it
