The presence of tartrate crystals in a bottle of wine is commonly perceived as a fault by consumers. Crystals are mostly composed of potassium bitartrate but precipitation of calcium tartrate is becoming more and more frequent. While the formation of potassium salts can be prevented with the use of protective colloids, calcium stabilization requires specific interventions.
The result of a research and development project that took over six years, in which prestigious international institutes and universities collaborated, Zenith represents a breaking point with cold stabilization. The intrinsic properties of potassium polyaspartate, a polyamino acid produced starting from L-aspartic acid, an amino acid naturally present in grapes, allow Zenith to maintain absolute tartaric and color stability over time, to resist thermal stress and to inhibit the formation of tartrate crystals , keeping the organoleptic characteristics of the wines unaltered.

Zenith Color
It is a rapid and easy-to-use tool for potassium bitartrate and color stabilization of red and rosé wines.
Its formulation has been studied in order to obtain a stabilizer that is:
– Effective: it assures no changes in quality or characteristics of wine with full color and tartaric stabilization in a single addition
– Filterable: the special process adopted for the production of gum arabic reduces its clogging effect
– Respectful of the quality of the wine: it does not modify the sensory quality of the wine, reducing the risk of oxidation
– Sustainable: stabilization with Zenith Color reduces the consumption of electricity and water and the production of greenhouse gases.
