ENGINEERED & INTEGRATED WINEMAKING PROCESS (EWP)

Engineered & Integrated Winemaking Process is the integrated framework through which Enartis redefines how the winemaking process is managed, powered by the specialized expertise of Winegrid and Parsec.

EWP represents a new way of managing winemaking as a connected set of processes, managed continuously and adaptively: a framework in which data, interpretation, and action are linked within a single continuous flow, supporting the winemaker in maintaining process control.

A framework built on integrated expertise

EWP works because each of the three brands maintains its own specialist identity and contributes its specific expertise:

Enartis → integrated solutions for the entire winemaking process, from fermentation to bottling
Winegrid → precise, stable, and reliable data generated by innovative sensors
Parsec → intelligent systems for predictive and adaptive production process management

The three brands do not replace one another, nor do they overlap: they work as part of a continuous operational flow, and it is precisely in this continuity—not in the sum of the technologies— that the value of EWP .

Understanding and managing a continuous process

Winemaking is a continuous process, from grape reception through to bottling, in which each phase evolves and influences the next.

Managing this complexity requires continuous visibility into the process. EWP was created to support the winemaker in interpreting what happens throughout every stage of winemaking, enabling more informed decisions exactly when they are needed.

From framework to applications

EWP is a framework that can be applied to different process variables within winemaking. Each application makes the framework tangible by focusing on a specific variable and managing it in a continuous and integrated way.

The first application developed within EWP is yeast nutrition during alcoholic fermentation.

Nutrition is a variable that influences yeast behavior throughout the entire fermentation process: nutrient availability, nutrient form, and timing—together with oxygen management—directly affect metabolic activity, fermentation kinetics, and process stability.

Although oxygen is not used by yeast for respiration during alcoholic fermentation, it plays a fundamental role in yeast physiology. It promotes the synthesis of sterols and phospholipids, improving cell membrane fluidity. This enables yeast to:

• better withstand ethanol stress
• more efficiently assimilate nutrients required for metabolism
• rapidly expel harmful metabolites

Nutrition management therefore requires a continuous and adaptive approach—exactly what EWP is designed to provide.

Nutrition as a controlled process variable

The staggered and progressive use of nutrients, enabled by the automated dosing integrated within the EWP framework, makes it possible to avoid standardized manual additions and improve both fermentation efficiency and wine quality.

Yeast nutrition thus becomes a controlled and proactive process variable, making it possible to:

• improve fermentation consistency
• reduce the risk of sluggish, stuck, or abnormal fermentations
• optimize energy and labor resource usage
• contribute to a more sustainable production process


EWP solutions for nutrition

The application of the EWP logic to yeast nutrition is achieved through the integration of three complementary solutions, one for each brand within the framework.

NUTRIFERM – the nutritional dimension (Enartis)

The NUTRIFERM range provides yeast with the nutrients it needs to support a regular and controlled fermentation.

NUTRIFERM ULTRA L – liquid organic nutrient, 100% yeast autolysate with highly assimilable nutrients (from a selected strain developed with CERM). Supplies essential amino acids, yeast survival factors (sterols and unsaturated fatty acids), vitamins, and mineral salts.

NUTRIFERM VIT L – liquid inorganic nutrient based on diammonium phosphate (DAP), with high availability of ammoniacal nitrogen.

WINEPLUS – the data dimension (Winegrid)

Winegrid’s Wineplus sensors generate precise, stable, and reliable real-time data directly from the fermentation tank. They measure must density and temperature with high accuracy, without requiring calibration, while advanced algorithms interpret fermentation curves to predict key process moments.

EVO2FERM – the adaptive control dimension (Parsec)

Parsec’s EVO2Ferm is the stand-alone system that transforms data into calibrated interventions. It regulates the addition of organic nutrients, inorganic nutrients, and oxygen during the different fermentation phases, with automated dosing calibrated according to the yeast’s actual metabolic needs.
