pH is one of the most important parameters that winemakers measure and track in the winemaking process. Typically measured simply with a probe and meter, pH affects several aspects of wine stability and quality. High pH has historically been a difficult winemaking situation, where microbial stability and oxidative challenges can depreciate wine quality through fermentation and ageing.
