KPA (potassium polyaspartate) is a polymer that contains aspartic acid, a natural acid found in wine in varying amounts. It functions as a stabilizer to prevent potassium bitartrate precipitation. Enartis’ KPA stabilizer (Zenith) has been shown to inhibit tartrate crystallization in white, red and rosé wines. KPA can be used for all protein- and colloid-stable wines before final filtration.
